Is this correct?
She added "I don't crowd my memory with facts that I can easily find in an encyclopedia"--> She added that she doesn't crowd her memory with facts that could easily find in an encyclopedia.

If, at the time of reporting, she still doesn't crowd her memory .., then 'doesn't' is fine. Backshifting is optional here, not obligatory.
