You only need the indefinite article if your intention is to say that the food is prepared in one of several Mexican styles that you have in mind. However, this information might not be so useful when you consider my "by the way" remark below.

By the way, the food can't be (a) style, but we do say "Mexican food" or "The food is Mexican".

I think you're trying to say "This is Mexican food" or "This food is Mexican".

If you were aiming at a particular style of Mexican food, you would be more likely to name the region where that style is used. "This food is prepared in the style of the Guadalajara region of Mexico"; "These enchiladas are made with a recipe from Vera Cruz, Mexico".
