Which of the two should be used if the temperature is being measured in/at the centre of some product, for instance a sausage?

Hi,

Because you have to insinuate yourself into the sausage, I'd use "in."

If it's some flat object, like a hotplate, I'd say "at the center," but it would not be incorrect to say "in."
