Some frogs naturally freeze solid in winter, then thaw and hop away in the spring ... Scientists believe these frogs hold the secret for safer organ transplants.

Are "in winter" and "in the winter" interchangeable and synonymous? Thanks.

In this sentence, they can be interchanged. However, it would be a nicer sentence if the writer had been more consistent in his choice.

Consider someone who is speaking in the summer. 'Bye-bye. I'll visit you in the winter.' This sounds like next winter. This can not be interchanged with 'in winter' without sounding awkward and changing the meaning.

Sometimes:

It snows in [the] winter. (= every winter)

But:
What are you going to do in the winter? (= next winter)
What did you do in the winter? (= last winter)
