In vs during

Dear teachers,

Kindly check my sentences. If both are natural, do they have different sense?

a. We always go skiing in winter.
b. We always go skiing during winter.

Alongside John's comment, I think "in the winter", or "during the winter" is more grammatical.
Though, I prefer "during the winters".
