"I liked it in Ireland" is correct if you are talking about enjoying a visit to Ireland.

"Thanks for having me in there" is not a likely thing to want to say, and it does not naturally follow the first sentence. If you are thanking the people in whose house you stayed, you can say "Thanks for having me."

Drop 'in there'.

We only use 'in there' when speaking of an enclosure. A country (Ireland) is not an enclosure.

I don't want to go into that cave. It's too dark in there.
