In the following text couldn't 'Age' be used instead of 'Aged'? If not, then why?

Do you mean I can use 'Age' in place of 'Aged'? I have always seen 'Aged' being used, not 'Age'. And all the legal documents which I have seen use 'Dated' instead of 'Date'. What's the reason?

I have always seen 'Aged' being used
And how many tombstones have you seen, Jackson? The 'dated' situation is not the same, but you could easily see 'Date: 15 May 1851' too.
