Can we use "in the event of" in the plural, i.e. "in the events of"?

No. Even if the events are plural, you would say "In the event of X and Y happening.."

I've never come across it, although it would seem to make sense. I would advise against using it.

Event, of course can be used in the plural: [several events have occured recently that make me wonder if.....]

How about "in all events, please remind him that..."?
