"about" is more used for something with written content.

A book will be about a topic.
A picture will be of a subject.

So it's an image of the country, not an image about the country.

I think for "You didn't seem excited about doing it", it might be better to say "That's the feeling you gave off".

If you say "that's the last image I have of him; on his death bed", it could also sound like you are talking about a photograph. It might be better to say "that's the last memory I have of him". Image does work too, but be aware of its double perc
