I'm loving you or I love you?

As far as I know, some words like love, know, like, understand cannot be put in -ing forms. But, why do sometimes I hear people say 'I'm loving you' instead of 'I love you'?

I'm loving you. would literally mean that at the moment of speaking (right now) I'm in the process of loving you, which is odd and I can't really see it being used for any reasons other than poetic effect... Well, unless the speaker is trying to sound "cool" by deviating from the standard rules of English grammar.
