I'll have this rascal's ears...

But it's an outrage! I'll complain to Prince John.
I'll have this rascal's ears, (lop his ears?) no matter how.
Dares to rob me! Strip my person of jewels! Take his servant's jewels?

Yes. I'll cut them off.

Dares to rob me! Strip my person of jewels! Take his servant's jewels?

No. (He) removes jewels from my actual body!

'My person' means 'me, my body'.

It's kind of hard to be sure without more of the context but my guess is that the speaker is complaining that he has been robbed by someone else, presumably by the person whose ears he intends to lop off.
