What's the difference when I say these:

Thank you very much! I'll see you next week. And

Thank you very much and see you next week. And

Thank you very much and I'll see you next week.

Are all the same and grammatically correct?

There is no difference to the different versions. "See you next week" is a shortened version of "I'll see you next week". Even though you don't say it, the "I'll" is implied, it's just been dropped for ease.
