 Is it 'if you were they' or 'if you were them'? Or are they both acceptable?

I would add just a bit to your "correct" answer.
Your suggestion about 'position' is very good advice! As to the other, "they", technically is the correct form, but "them" is much more common (in the States, at least).

Oops, I missed that. I think you usually use the singular, because people usually use those kinds of expressions to talk about a general situation, a position shared by several people that is the same for all of them. So I would take "position" as a way to say "situation".
People over there are very poor. If I were in their position... (one situation: they're poor)
