There may be different opinions about it, which isn't exactly unusual with regard to English grammar.

I agree with you. I prefer the first one, but just curious to know if it is possible grammatically. So is it correct grammatically even though it sounds redundant?

Actually this was a translation from Italian. The 'unsure' person is talking to a guest on his arrival and is referring to his thoughts when preparing dinner for his guest earlier. I tend to go for the simple past but in Italian they use a more complex structure and that's how 'would have' turned up.
