If we could all be so lucky

What does 'If we could all be so lucky' mean, please?

So, where are you from, Miss Walls? I think I detect a slight twang in there somewhere.

Miss Walls's fiance: Jeannette grew up in Virginia surrounded by trees and fields of wild flowers. If we all be so lucky.

The Glass Castle, movie

The expression is "we should all be so lucky", meaning that she was lucky to have had such a childhood, to the extent that everyone else would be fortunate to have had one just like it. You have typed it two different ways, so I am guessing that you misheard.

From your question, I assume that the quote should read:

Tara2Miss Walls's fiance: Jeannette grew up in Virginia surrounded by trees and fields of wild flowers. If we could all be so lucky.

This apparently expresses a wish or desire. The more usual way to say this is "If only we could all be so lucky".
