I wouldn't like to...

I know and have seen the expression "I don't want to..." but I don't really see "I wouldn't like to...".

Would "I wouldn't like to..." be wrong to use as a more polite expression of "I don't want to..."?

Thank you for your help.

The negative of "I would like to..." is "I don't want to...". Here no question of politeness arises. It is the usual English usage. We just follow it. I think it is unsuitable to say "I wouldn't like to..." to be more polite.
