1: My shirt's (has, is, or was? And how can you tell?)opened up.
2: Why wouldn't it be?
1: This guy knocks my elbow, I wind up (end up?) spilling my drink
all down my chest. And this Parvati girl, Is that the girl's name or has other meaning?

"shirt's" - well, you can't tell, and it doesn't really make much difference, since all we need to know here is that the drink spilled on his bare chest. Since everything else he says is in present tense, I'm going to guess "is opened up."

"wind up" - yes. The events led to him spilling his drink.
