I want to know the difference between persons and people.

I've known person's plural word is people, but I saw the persons in the book.

The word was written like this " The severe earthquake killed hundreds of persons and left thousands destitute."

Why did they use persons instead of people??

Most people would choose people in most contexts.

Use people every time. You will very rarely be wrong.

You can only use persons in very formal contexts. Persons also appear in recipe instructions.

Avoind using it in your everyday English. It sounds odd in an informal context.
