Hello,

If I answer the question "What did you do last night?" "I read a book.", does it mean that I finished the book?

No. Not necessarily. It could mean that you read part of a book. You did some book-reading.

If I didn't mean that I hadn't finished the book, I would say something like:

I was reading

I read part of XX

I read more of XX

I read for a while

I read some

This is only my own personal style, not a rule.
