I never have enough

Hi everyone, I would like to know is it possible to use this construction: "I never have enough of something" because I think it's better to say I always don't have enough of something or I have never had enough of something, or even I never had enough of something (never as emphasis form of not) but I never have enough of something sounds weird to me.

P.S. By the way, I would greatly apreciate if you correct any of my mistakes, or tell me that some words or phrases sounds strange in the certaint sentence, because I'm too new to English speaking/writing/learning :-D

(grammatically fine but I'd prefer " anything ") In fact , I'd use anything in all of your examples for example I've never had enough of anything.

The of is usually not needed: I never have enough time to do what I want.

You didn't make it clear that "something" is the place holder for other words.
