I missed you all very much when I was [staying] abroad.

please let's have a look at two sentences:

1) I missed you all very much when I was abroad.
2) I missed you all very much when I was staying abroad.

Are both correct and mean the same?
Can I replace you all with all of you?

They are fine. You can also change "when" to "while."

In #1, maybe you were abroad for a short period, maybe for a long period.

In #2, the word 'staying' implies it was not a short period.
