I cannot decide whether I should insert the definite article "the" in this sentence:

"I love windsurfing. I like (the) wind blowing through my hair."

Can you, please, tell me whether to keep it or remove it?

Although it works with and without the definite article, I would keep it if you are referring to the wind caused by the motion of the surfboard.
If you are talking about wind in general (skiing, surfboarding, parachuting, or windy weather) then leave it out.
