1. I have seen this show already or I had seen this show already

2. She has seen this fireworks show before. or She had seen this fireworks show before.

The Present Perfect refers to 'the past up until now'.
eg I'm sitting in the theatre right now, and I say 'I have seen this show already'.

The Past Perfect refers to 'the past up until some particular time in the past'.
eg I was sitting in the theatre watching Mama Mia last July 1st., and I suddenly realized that I had seen this show already.

3. I have seen this youtube video. or I saw this video already.

Both are acceptable. The Present Perfect shows the statement has some importance to the present situation.
The Simple Past makes it more of a simple comment about a past event.

"I saw this video already" is less common in BrEng than AmEng.  I'd tend to say "I've seen this video already".
