Grammar

I have noticed the use of A or AN after a proposition

To make things clear:
-we are going for a walk
-I was in a sweat
BUT
Mary is in trouble (not in a trouble)
WHAT IS THE RULE?
Thank you for your help.

We usually do not use an article before words that express generalities. Sometimes we do not use an article before non-count nouns. Here is a good article explaining the important rules.

Besides that, I also saw "a nice wine" before!
can wine be countable?

Not sweet, but sweat. (pronounced: swet)

"A sweat" is idiomatic and describes the physical condition of being sweaty.
Example: I worked up a sweat in my morning exercise class.

The use of an article before non-count nouns is idiomatic - sometimes we use it, and sometimes not.
He wiped the sweat from his brow. (specific reference to the perspiration on his forehead)

Yes. In this case, wine is countable, because it is referring to a vintage of wine, or a variety of wine, not the general liquid "wine", such as:

We have wine with our meals. (referring to the liquid)
