I am taking some new classes on French, and I've noticed an improvement/a progress.

For a start, do both improvement and progress fit well in the above text?

Second, are "an" and "a" optional? Thanks.

Use these:

I am taking some new classes in French, and I've noticed an/some improvement // some progress.

The only difference is that 'an improvement' tends to point to a particular, limited improvement (e.g. pronunciation)
