... "I have finally paid off my/the debt"

When you are talking about something that is yours, is it more common to say 'my (something)' or 'the (something)' as in 'I have finally paid off my/the debt' ?

No, "all the debts" wouldn't necessarily be your debts. Say "I have paid off all my debts".
