I have a problem, help me please

I have a doubt, and this is with the use of "One/Ones". I do not understand what it is mean and how is its use.
This is the explanation of my English Book:
These pronouns can be used to refer to a particular thing or things in contrast to others.
Which ring do you like? That one (That ring)
The restaurants Martin likes are the expensive ones. (the expensive restaurants)
