I have a problem, help me please

Well guys, It´s nice to meet you

I have a doubt, and this is with the use of "One/Ones". I do not understand what it is mean and how is its use.

This is the explanation of my English Book:

These pronouns can be used to refer to a particular thing or things in contrast to others.

Which ring do you like? That
one (That ring)
The restaurants Martin likes are the expensive
ones. (the expensive restaurants)

Thanks a lot! Really, i do not understand nothing of this.

Which ring do you like? That one (That ring) --- Probably the one ( the man or boy) who tells this shows the ring with his/her finger meaning the ring. Yoiu can replace the ring with one: Which ring do you like? That ring.

In order not to repeat the same noun, you can use 'one' or 'ones'. For example:

A: Which book do you want?

B: The blue one.

Here one is used instead of the 'book'. When you refer to something plural, you need to use 'ones' in place of 'one'. I hope this helps.
