1. I had taught English for 3 years until I quitted.

2. I had taught English for 3 years when I quitted.

Neither is correct in BrE - the past tense of the verb is 'quit', not 'quitted'.

It's the same in American English.

I think "before I quit ...." is more idiomatic.
