I find this grammar a bit erroneous

"I don't have a nose like Hitler!"
In my opinion,
it should be "I don't have a nose like that of Hitler." instead.

You can also say 'I dont have a nose like Hitler's.'

It doesn't have to be.

I don't have a nose like Hitler (has) is the original intent. We often leave out words in comparisons, especially if it's obvious which words are intended. Still, you should add has if there is any chance of confusion.
