I find jogging not so challenging

My teacher use the followin sentence: I find jogging not so challenging and really helpful in keeping/getting fit.

why we can use 'not' in the above sentence?! can we use 'not' before adjective?!
Can I say : " I don't find jogging so challenging and really helpful in keeping/getting fit. "
