I didn't/couldn't catch what you said.

Hi, is there any difference between 'I didn't catch what you said' and 'I couldn't catch what you said'?

If one said something very fast and I didn't catch what was said, which sentence should I use?

Also, what should I say if I couldn't understand the person because my English skill was poor? 'I didn't understand what you said?' or 'I couldn't understand what you said?'

Not much. One is factual, the other is your ability. Usually it comes with a question.

I didn't catch what you said. Could you please repeat it?  (The speaker repeats the sentence, perhaps louder if there is a lot of noise around.)
