In my opinion, neither is correct properly.

"I didn't/did not say anything about you" is the correct sentence."

Noticed the difference between your original sentences and this one?

Both are wrong. The first sentence is almost correct.

I didn't say anything about you.

The auxiliary do has been used in negative sentences and questions for about 400 years. It is an English peculiarity, not known in other Germanic languages. There are exceptions. Do/does/did is not used with some verbs, like the defective/modal auxiliaries can,
