I couldn't care less This is the version that makes sense.
I could care less This does not make sense. It means the opposite of the above. When I hear or read it, it makes me think that the person does not care much about using English correctly.

They are both natural and synonymous to me.
I take I could care less as the end of a sentence which has an implicit beginning,

When that is used to mean couldn't it is a mistake. It is one of many common mistakes in English that some native speakers make. You can use a search engine to look for lists of common mistakes in English and be surprised how many there are. Some are funny.
