Letter Writing

I am writing to my professor for the first time. She asked us to write a brief introductory email since she needs to collect our email addresses.

Please let me know any mistakes I should correct or any improvements I can make!

I am especially concerned about the 'I hope you're enjoying the beautiful weather today.' sentence. I wonder if that is polite enough to use in my first email to the professor. Also is there anything that I could add in the email?
