"I am not the one they think I am.'

The they think was inserted between the one and I am? And there is no meaning difference although it is omitted?

Like the examples below,

1) I remember the boy that I think was tall and handsome.

2) He is the boy I think they take care of.

Or the they think in the example is kind of different from the I thinks in the numbers? What do you think?
