I am looking for two words

First off, I am wondering which one of the following synonyms is used in Am. Eng to represent the intersection of two roads?

crossing? crossroad? intersection?

So like if I'm showing the way for someone, I should say "take a left at the second intersection? crossing? crossroad? or maybe lights?

Second one, what is the adjective for things, for example, candy, that is bouncy, jelly, you know you can chew it for a long time?

Intersection - if you count all the side roads. (crossroads is OK, too. It seems more used for country roads.)
lights / light / traffic signals - if you only count the main crossings with traffic control.
