Hyphenated adjectives

I'm writing a short blurb for a dating website. What do I do in the case of compound adjectives following a comma? Do I hyphenate them or not? For example:
"I'm a nice guy, well educated, open minded and down to earth."
OR
"I'm a nice guy, well-educated, openminded and down-to-earth."

Style guides would tell you the hyphenation in your second sentence is right, but also fussy looking. I'm a down-to-earth, nice guy with good eduation and an open mind..
