How to write " fraction"

Hope that you guys can explain what are difference between "two thirds " and "two-third". Btw did I type them correctly with ending<s>?

A noun following two is always plural, with the exception of a compound quantifier.

two apples, two fish,  two toes
one third, two thirds
My dog can easily jump a two-foot fence.  (quantifier)
