How to use the definitive article in these examples

Hi! I would like to know when I should use the definitive article. When I'm talking about protein deficiency in general I assume that I don't have to use the definitive article. When I'm talking about protein deficiency in a particular country e.g. in China should I use the definitive article? Or, when I'm talking about accountancy in a particular company should I use the definitive article?
