How to use a SAYING in a formal text

How do we use SAYINGs in a formal text while they are mostly in an informal style!? for example the saying "Don't count your chickens before they're hatched".

Do we simply change the short forms into complete ones and say "man does not count its chickens before they are hatched"!? or what!?
