What adjective could I use to describe meat that is very stringy and gets stuck in-between the teeth? Are chewy and wiry good?

Your first idea, "stringy", is fine. "chewy" is also OK to describe meat, though it doesn't mean exactly the same. I wouldn't use "wiry" to describe meat.
