How to correctly write adjectives

Hi. Please help.

1. Let us pretend we are talking about three different-colored vests, one in each color (one in yellow, another in blue and the last in black). Can we write this?

There are three different-colored vests. One is a yellow vest. The other two are blue and black vests.

2. Are both of these correct? If not, which is correct?

He worked on its financial management program.

He worked on its finance management program.

3. I think the sentence below references (is this the right word in this context?) three different kinds of operation, that is, hotel operation, restaurant operation, and catering operation.

He prepared food for hotel, restaurant, and catering operation with big sales.

4. Do you have a tip as to how to handle this type of adjectival formulation? (I am not sure the phrase "adjectival formulation" is the correct phrase to use in this context, but can't think of any others.)

He prepared a to-die-for crispy, caramelized snack.
