How to begin a Covering Letter

I am applying for a job under recommendation from a friend, and I have been advised to write a covering letter with my CV. I am not sure how to address the manager, as I have been told his name, but we've never met. Is there another formal way of starting a letter other than "Dear [whoever]"? "Dear" just doesn't feel right ...

Hi, Assume his name is Tom Smith. Starting with 'Dear Mr Smith' is the normal and correct form of address. It doesn't matter that you have never met.

Starting with 'Dear Mr Smith' is the normal and correct form of address. It doesn't matter that you have never met.
