How should I know which to pick?

It's amazing [that/how] long hair can make such a difference.
It's amazing [how/that] they always know where they are on the court.
It is amazing [how/that] you always argue.
It is amazing [how/that] nice you are.

What is the difference between : How should I know which to pick? and How to know which to pick?
