How is 'open' different?

When we use a verb in front of a noun to show something of the noun, we put 'ed' in the verb:

The closed door.
The injured person.

so, is 'closed' is this case an adjective?

now with an Open door, why isn't it 'opened'?

"None of the shops were open."
