How easy it was

The thing I remember most about my first driving test is that it was very easy.

Is this sentence above correct? Does the word 'that' work fine? If so, can I leave that out?

Can I say this below in the same meaning?

The thing I remember most about my first driving test is how easy it was.

Thanks
