How does one go about defining "jaw-dropping"?

"Go about" means "to start to do (something)," doesn't it? Does the sentence above mean How does one start to define "jaw-dropping"? If it does, it doesn't make sense to me. Is it wrong to say How does one define "jaw-dropping"?
