How do we use the word "kind"?

Hi,
My question is as title. Can "kind of " be followed by both singular noun and plural noun?
For instance: I like this kind of desserts.= I like this kind of dessert.
Right? Here is another relative question.
If I say, " What kind of ____ (book; books)do you like best?" The answer is "book" not "books," why?
