How can I understand "a land of cavaliers and Cotton Fields."?

If you say a land of woman and man, I can understand.
If you say a land of happiness and sadness. I can understand.
But, what does "a land of cavaliers and Cotton Fields" mean?

----This is a sentence come from <gone with the wind>

Cavaliers simply means gentlemen in that sentence. You know what cotton fields are and the American South is full of them. BTW cotton fields shoud not be capitalized.

Thank you. I understand the sentence now.
But I just copy the "Cotton Fields" from the book, maybe it is ok to be capitalized?
