No. You could speak of 'homework assignments'.

I think "a lot of homework" is grammatically accepted. But I still don't know what to say if you have 2, 3 or a specific number of homework.

Homework is a non-count noun.

I have a lot of homework to do tonight.

I have three homework assignments to do tonight - one in English, one in Math, and one in History.

That must be a regional thing. The word assignments is not used for homework, everywhere in the world.
